Carrots are one of my favorite spring vegetables, both hearty and sweet, and they are easy to use in just about anything. This recipe for Carrots with Raisins is incredibly simple to prepare for a weeknight meal, but, cooked in white wine and seasoned with just a little honey, parsley and salt, it has the feel of an elegant side or first course.Here are a few more dairy-free recipes that celebrate the carrot:
